The “Azienda Agricola "Il Simposio"” and Maria Luisa with Achillina

The “Il Simposio” farm is situated about ten km far away from Nettuno Town, placed on the sweet slopes surrounding the Roman farmland.
It was created in the ‘50es by a family business idea, based on milk cattle farm as well as on traditional agriculture.
Once 30 years of activity passed over, Franco’s daughter - Maria Luisa Nardelli – became manager of the firm as well as owner. She took the decision to turn her activity towards vineyards and olive cultivations.
With her the company got the present name, originated from the great passion for Plato, a philosopher of the ancient Greece, widely and deeply studied during the years of University, whose dialogue – the “ Simposio” – matches very well with the communication among people as well as with the conviviality, to which the products of the farm are voted.
The present employment is dedicated to valuable wine grapes and to selected varieties of olive trees: the Leccino, Pendolino, Itrana e Rosciola.
500 trees approx. are extended onto 3 hectares of land so to have an average yearly production of 1500 l of extra virgin oil. The extra virgin oil “Il Simposio” is a high quality product, a result of the daily agronomic “cure” on the field and of the deep attention dedicated to the consequent transformation. The union between these choices gives out a product, that does not aspire to the quantity, but to the value of quality and typical production, i.e. it’s aimed to be exclusively evaluated as “extra virgin” oil, thanks to its very low acidity and organoleptic excellence.

The delicate harvest phase is accurately carried out by the “grazing by hand” method, consisting in posing the drupes into apposite aerated boxes, for a daily transfer to the olive press.
The high technology equipment belonging to the usual oil press allow to obtain a continuous and integrated process, always maintained under 28°C: the so called “cold manufacturing”. All the various steps are supervised by the owner –also evidence of the added value dedicated to obtain a pure extra virgin olive oil.
The phases of conservation and packaging, also delicate as important, are achieved in a modern and well equipped plant, observing any possible caution in order to avoid any sudden change of temperature or any contact with the air, that could occur to the oil.
The extra virgin oil “Il Simposio” is available in elegant bottles of 0,50 l or in easy tin cans of 5 l, either directly at the farm site either at specialised sales’ points, where regional food products are promoted.
It is also possible, upon order, to create personalised labels or special packaging bottles with special shapes, different from the standard ones.

I firmly believe, that only improving the quality of the products and respecting the natural ecosystem, it is possible to create activities, useful to everybody’s wellness.
